Steps

  1. Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

  1. Once the NOMAD Fire is ready, place the coals in your cook box. 
  2. In any cast iron or pan, prepare olive oil and bring to a high temperature for frying. 
  3. Slice the shallots thinly, dredge in a light coating of flour and place in the hot oil. Take off oil once golden brown and crispy. 
  4. Season your Porter Road flank steaks with your seasoning of choice. In this recipe we utilized Zavala's BBQ pork seasoning. 
  5. While the steaks are grilling, prepare the sauce in a hot pan. Equal parts honey, soy sauce, hot sauce, and olive oil. Dice lemon grass and garlic as well. Heat sauce until it thickens and apply to the steaks as they grill. 
  6. Toast the bao buns (optional) and add sliced pork flank, pickled veggies, cilantro, and one last layer of sauce. 
  7. Take a bao and enjoy!
