- Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

- Place coals near the bottom right vent side and add smoking wood
- Apply a light layer of olive oil and season the salmon with the cajun rub
- Smoke the salmon for 25 min or until golden brown with an internal temp of 130 degrees.
- On a tostada, add sliced avocado, a piece of smoked salmon, fresh pico de gallo and top with a squeeze of fresh lime juice. For the spicy folks, add your favorite hot sauce as well.
- Enjoy and repeat!
