- Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

- While those coals are getting hot, oil and season your chicken wings in a bowl. For extra flavor, place the bowl of chicken wings in the refrigerator to marinate for 1 hour.
- Before placing your grate on the grill, add some mesquite wood chips onto your coal bed for smoking. You’ll then place your chicken wings offset from the coal bed and smoke until internal temps reach 145 degrees. This should take 15-20 min.
- Pull them off the grill and place in a bowl and add the buffalo sauce. Once all the wings are coated in full, place the wings back on the grill and finish until each wing reaches 165 internal temperature. Repeat this step with the Treaty Oak Bourbon BBQ sauce.
